HOMINY CROQUETTES
1 cup hominy grits
1 egg
3 cups boiling salted water
1 cup white sauce
Boil hominy in water 5 minutes, then put in double boiler
and cook for 2 hours. Add egg well beaten to white sauce.
Form into croquettes, roll in egg and bread crumbs and fry
in deep fat.
