MINCED LIVER WITH TOAST
2 lbs. beef liver
Pepper and salt
1 oz. butter Toast
Boil the liver for half an hour with salt.
When done remove skin. Chop very fine. Put in frying pan and cover
with water. Simmer gently for fifteen minutes, thicken slightly
with flour, adding butter and seasoning. Serve on hot platter,
garnished with parsley and triangles of toast.
